Hummus Tacos Ingredients Corn Tortillas Hummus Olive or sesame oil 3-4 cups sliced cabbage ½-1 leek, sliced thinly Sea salt Avocado Tofu Sour Cream (optional) Directions: Heat cast iron skillet, then heat tortillas, flipping once. They should be soft and warm. Heat a medium-large skillet over medium heat. Add olive oil. When oil is warm, but not smoking, add cabbage, a pinch of salt, and sauté 1-2 minutes until soft. Add leeks, a pinch of salt, and sauté 2-3 minutes. Place tortilla on the plate, the layer hummus, cabbage and leeks, then sliced avocado. Add tofu sour cream (or dairy sour cream) and enjoy. *Add Bacon and/or feta cheese to unveganize this recipe. Other vegetables that are easy substitutes if you don’t have cabbage or leeks: any other type of onion thinly sliced, zucchini, yellow squash, or almost any other vegetable thinly sliced and sautéed.
